I've tried many "pancake" recipes -- this is our favorite to date
- 4 eggs
- about 1 cup of strawberries (you could use bananas or blueberries or any fruit)
- 1/4 c coconut flour
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 2 tbsp almond butter (or almond flour works, too)
- 1 tsp baking powder
- 1/2 tsp sea salt
- Mix together in a food processor.
- Cook like regular pancakes.
